Seasoned Tilapia

Hi O.

So a few nights before I left for college my mom and I made this delicious tilapia.
IMG_1484We made some fried rice by sautéing some vegetables and in the rice and some spices. She made this yummy and simple side of Mandarin oranges, almond  topping, and Asian dressing to give the dish a nice twist. For the tilapia we just put that on a pan with some olive oil and added all the spices we want which included seasoned salts, cayenne pepper, onion powder…really all of this is just to taste. So fast and simple!

Grilled Veggies with Chicken

Past couple weeks have been crazy, I moved back home, we have had house guests (aunt, uncle and cousins from London) and we’ve have been all over the place really. I haven’t been cooking at all. Today was my first day back at uni, and I cooked dinner for myself for the first time in quite a while.

I grilled tomatoes, zucchini and broccoli in the oven, they were sprinkled with olive oil and seasoned with salt, pepper and oregano I enjoyed this with some leftover chicken

Insanely easy and quite boring however delicious and healthy! This is as exciting as it gets for me eating wise at the moment. I’m not going to apologize though, I never said I was a master chef.

Zombie Cake Pops

Hey O! So as you know, it’s my second year of college and I just moved in as a Resident Assistant into the dorms. We had a bunch of training and then 40 of my little munchkin freshmen moved in. I made our floor theme Despicable Me minions brightening up their worlds by telling them “You are one in a Minion”! The entire dorm’s orientation theme was zombies so we had a lot of fun with that. And just so happens that both of my roommates had birthdays 2 days apart as well as 2 other birthdays on the floor, so I decided to treat them with cake pops!

Ingredients:
1 box cake mix (I used chocolate cake mix!)
Eggs, water and oil for the cake
1 can of frosting (I used Betty Crocker Cream Cheese frosting)
25-35 cake pop sticks
White chocolate chips or Candy Melts (these work better) (at least 24 oz)

1. Bake your cake according to the box. Remove from oven and cool completely.
2. Once cake is COMPLETELY cooled, crumble it up. Just mash it up with your hands.
3. Add 3/4 container of frosting of your choice. Don’t use too much frosting or the cake pops will be too wet.

4. Combine the frosting and the cake crumbs with your hands.

5. Next you want to make the actual cake balls. After you scoop the cake, roll them in your hand until they are complete round balls.
6. Carefully melt about 1/4 cup of white chocolate on the stove and add a tablespoon of oil. 
7. Take one cake pop stick and dip the very end in the white chocolate and then stick into the cake ball. Repeat with all the cake balls. Put the cake pops into the freezer to set for 30 minutes.

9. While the cake pops are chilling, melt and color the rest of the white chocolate and add food coloring.
10. Remove the cake pops from the freezer. Dip into the white chocolate until complete covered.
11. You can either set the cake pops on a wax paper lined tray to harden or devise some type of container to keep them upright to keep the completely round shape.
12. Let the cake pops set out until hardened.
13. To add a fancy flair, I sprinkled some with the blue sugar sprinkles.

Quick and Healthy Apple-Crumble-inspired dessert

I was hungry for something sweet today so made this quick little dessert/snack for myself. I chopped up an apple and roasted it in cinnamon on a pan.

Then on the same pan, I made crumble from buckwheat flour, oats and coconut-oil, sweetened it with honey. I added some low-fat greek yogurt. It only took a few minutes to prepare and it was very satisfying 🙂

Milk and White Chocolate Banana Muffins

I am indulging in some of my last times I can have dessert before my boyfriend and I crack down before school starts. I made these yummy muffins for my last day of work yesterday morning and they just ate it up…literally.

Recipe:

  • 1/4 cup vegetable oil
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs, lightly beaten
  • 3 bananas, mashed (1 cup mashed banana)
  • 1/2 cup milk chocolate chips
  • 1/2 cup white chocolate chips

Pre-heat the oven to 350°F.

Grease and flour a muffin pan.

In a large bowl, whisk together the flour, sugar, baking soda and salt. Mix in the oil, bananas and eggs. Stir in the chocolate chips (do not overmix!) and pour into the prepared pan. Bake until a toothpick inserted in the center comes out clean, about 30-40 minutes.

Makes about 1 loaf or 12 muffins.

Lettuce Wrapped Cayenne-Rubbed Thai Chicken with Avocado Salsa

Hey O. A few nights ago I made this dish and I’ve got to say it’s been my best dish yet. It had so many flavors that just came together all in one wrap. The name kind of encompasses what it was but here’s the ingredients and recipe!

Cayenne-Rubbed Thai Chicken:

·     2 boneless, skinless chicken breasts, thinly sliced crosswise

·     Spicy Asian Dressing (used Trader Joes, Asian style Spicy Peanut Vinaigrette)

·     Coarse salt and ground pepper

·     1-2 teaspoon cayenne pepper

·     2 tablespoons olive oil

·     1 large onion, halved and thinly sliced

·     1 red/yellow bell pepper, ribs and seeds removed, thinly sliced

·     3 cloves garlic, minced

·     2-3 teaspoons grated peeled fresh ginger

·     1/4 to 1/2 teaspoon red-pepper flakes

Place chicken, cayenne pepper, 1 teaspoon salt, 1/4 teaspoon pepper, and ¼ cup dressing in a resealable plastic bag refrigerate overnight.

In a large nonstick skillet, heat 1 tablespoon oil over high heat. Add half the chicken; cook, stirring constantly, until opaque throughout, 2 to 4 minutes. Transfer to a plate. Repeat with remaining chicken.

Add remaining tablespoon oil to pan, along with the onion and bell pepper. Reduce heat to medium; add garlic, ginger, and red-pepper flakes; cook, stirring, until fragrant, 30 to 60 seconds.

Serve in lettuce cups.

Topping:

·         1 medium red onion, finely diced

·         2 tablespoons fresh lime juice

·         1 Hass avocado, pitted and cut into chunks

·         Chopped peanuts

In a medium bowl, combine onion and lime juice; set aside. Just before serving, fold avocado chunks into onion mixture; season with salt and pepper. Serve chicken topped with salsa. Drizzle extra dressing to taste!

I served this with a side of roasted potates (in oregano, thyme, olive oil, and salt and pepper)

Inspiration India: Spicy Meatballs

Ingredients:
Small knob of ginger
A clove of garlic
1 chili pepper
1 onion (red or white)
A hand full of coriander/cilantro
1 tsp garam marsala
1 tsp curry powder
2 table spoons tomato paste
400 g ground beef
some flour

1. Chop onion, coriander and pepper. Grate ginger and garlic.
2. Mix together with spices add tomato paste/pure and blend slightly with handblender
3. Now turn this in the ground beef add flour and fry on hot pan.

I enjoyed this with garlic-mashed sweet potatoes

Protein and the ‘Good Fat’ Breakfast: Poached Eggs and Avocado

Hey cuz! This morning was a quick but really easy breakfast. The best part about it is that it is super filling due to the combination of egg and avocado. I poached the eggs, adding 1 tbs of white whine vinegar to a pot of simmering water and then gently pour the egg in. I toasted the bread and topped that with a mixture of avocado, salt and pepper, and lemon juice. Added a few leaves of parsely, drizzled some olive oil on top, and thats that! Quick, easy, healthy.

Quick and Easy Baked Banana Snack

This snack is so easy and so delicious. All you need is some mashed banana, honey, cinnamon and oats. From there on you can add whatever, in the ones i made today I added desiccated coconut and some of the muesli I made a few days ago. I’ve made them before with chopped nuts, raisins, seeds and even grated apple.
Mix the ingredients till it has a fairly thick consistency pop them in the oven for a 5-8 minutes. And bam! Easy, delicious, sweet AND sugar-free snack.

Breakfast: Cheese Blintzes and Smoothie Cleanse

O! I made some breakfast for my sister and I this morning. And because my mom is on this 3 day smoothie cleanse she saw on Dr. Oz, I decided to join her just as an added touch to my meal.
A blintz is a thin crepe-like pancake filled with cheese.

The crepe recipe is 1 egg, 3/4 cup pancake mix (just add water), 1/2 cup water, 1/3 cup sugar, tsp vanilla, pinch of salt. For the cheese filling, I mixed together 1 cup lowfat ricotta cheese, 1 package (8 oz.) cream cheese, 1/4 cup sugar, 1 egg yolk, 2 tsp fresh lemon juice, 1 tsp vanilla, pinch of salt .

What I did was cook one side of the crepe and take it off the pan, fill the center with a spoonful of cheese and then folded it to go back on the pan for another minute. I thought it might be heavy because I the cheese but it was super light, I added a strawberry topping, AND my sister ate it, which is saying a lot. For the strawberry topping, the ingredients were, 2 cups chopped fresh strawberries, 1/4 cup white sugar, 1/4 cup brown sugar, 1 tsp vanilla, 1 tbsp cornstarch. I put the sugar and strawberries in a saucepan on medium heat until it came to a boil and then added the cornstarch. 

And as for the smoothie, it had blueberry, mango, avocado, cayenne pepper, coconut water, lemon juice, kale, and flaxseed. I can almost feel my body cleansing itself! Almost. Since you told me about the whole eating healthy thing you should really try out the 3-day cleanse by Dr. Oz. Mom swears by it. Missing you.

High Protein Breakfast + Muesli Recipe

So I want to share a two high protein breakfast options. The first is skyr. Skyr is a traditionally Icelandic dairy product, the consistency is kind of like yogurt and it has a fresh, slightly sour taste to it. It’s low in fat and high in protein so it’s perfect for my diet although it’s definitely not paleo so I guess i changed my mind again. I had this for breakfast a couple of days ago topped with fresh strawberries and muesli. Then there is quinoa. Quinoa is a South American seed that, like skyr, is high in protein and quite low in calories (and not paleo either). For my breakfast today I made quinoa porridge which I then topped with the muesli and blueberries.

The muesli was homemade it was quite easy here is the recipe.

Indgredients:
Buckwheat flour 25 g
Chopped hazelnut – 50 g
Chopped brazil nut – 50 g
Linseed – 20 g
Oats – 25 g
Coconut oil – 2 ts
Cinnamon – 2 ts
Honey – 2 ts

Steps:
1. Put cooker on medium heat, add oil.
2. Add the flour, this step is making the crumble.
3. Add oats, nuts and cinnamon shortly after and allow it to brown as much as you like.
4. Add honey and linseed.

This can be used as topping for anything you want. Needless to say any type of flour and any combination of nuts work. One could also add dry fruits and berries, whatever you like.

Dinner: Ratatouille (with potatoes) and Chimichurri Chicken

Hey O. I’ve been eating out a lot but with that I got a few ideas! Tonight I made a yummy dish for my family which was pretty healthy for my standards :D. It’s a nice one because it really doesn’t use too many dishes.

I cut up some potatoes and added some salt, pepper, and olive oil and roasted that in a pan for about 20 mins. I cut up some vegetables for my ratatouille (Zucchini, tomatoes, onion, red pepper and yellow pepper). And added those to the pan for another 20 mins.

I blended my ingredients for my chimichurri (ingredients below), cut my chicken breast down the middle, and filled the center with it. I placed the chicken breast on top of the ratatouille, spread some bread crumbs on top, and put the pan in for one last 20 mins and voila! The family loved it!  -J

Ingredients (ratatouille)

  • 1 zuchini
  • 3 red potatoes
  • 1 red onion, peeled
  • 1 red pepper, deseeded
  • 1 yellow pepper, deseeded
  • 4 plum tomatoes
  • olive oil to your liking
  • salt and pepper to your liking

Ingredients (Chimichurri)

    • 1 bunch flat leaf parsley
    • 8 cloves garlic, minced
    • 3/4 cup extra virgin olive oil
    • 1/4 cup red wine vinegar
    • 1 lemon wedge (juice of)
    • 1 tablespoon diced red onion
    • 1 teaspoon dried oregano (optional)
    • 1 teaspoon black pepper
    • 1/2 teaspoon salt

Dinner: Sweet Potato Chips with Salad and Pork Chops

Hi J. I changed my mind forget about the vegan thing I’m paleo now. Lol. Today my friend stayed for dinner. We cut up some sweet potatoes and cauliflower drizzled some olive oil on and seasoned it with salt, pepper and rosemary.

Then we made a quick little salad with baby-leaves, tomatoes and cucumber. On the cauliflower we drizzled a lemon, honey, parsley dressing. The pork chops were fried in a garlic-tomato marinade.

IT WAS SOOO GOOD OMG. But I could actually totally have done without the pork chops. Luckily I have some leftovers for my lunch tomorrow, YUM!

Fluffy Fruity French Toast

Good afternoon O. I had a wonderful morning, decided to skip work today, and made some yummy french toast instead. My guilty pleasures tend to come in the morning.

It’s a lemon and vanilla based french toast topped with cream cheese ice cream, mangos, raspberries, and blueberries. For the egg custard I used egg, 2 table spoons of lemon juice, a splash of vanilla, and 1 table spoon of brown sugar. I immersed white bread into the custard and fried each side with a small dollop of unsalted butter for about 1- 2 mins on each side.

For the ice cream, I cheated and used slow churned already made vanilla ice cream and softened plain cream cheese. Mixed the two a refroze the ice cream. (Recipe called for plain greek yogurt but I wanted to try something new).

Humble Beginnings: Lemon Roasted Cauliflower Quinoa with Salad

Goodmorning J. It’s morning here in Copenhagen anyway. So this is our first post, I made this a few days ago for my dinner it was really delicious and easy.

I don’t have a detailed recipe for this one. All I did was chop the cauliflower in to thin slices and then roast it in the oven with salt, pepper and olive oil. I started boiling the quinoa, then i mixed fresh parsley, lemon juice, honey and oliveoil which the quinoa and roasted cauliflower was later turned in. The salad is just tomatoes and baby-leaves with some lemon and olive oil on. Easy, quick, filling and delicious.
