Good afternoon O. I had a wonderful morning, decided to skip work today, and made some yummy french toast instead. My guilty pleasures tend to come in the morning.
It’s a lemon and vanilla based french toast topped with cream cheese ice cream, mangos, raspberries, and blueberries. For the egg custard I used egg, 2 table spoons of lemon juice, a splash of vanilla, and 1 table spoon of brown sugar. I immersed white bread into the custard and fried each side with a small dollop of unsalted butter for about 1- 2 mins on each side.
For the ice cream, I cheated and used slow churned already made vanilla ice cream and softened plain cream cheese. Mixed the two a refroze the ice cream. (Recipe called for plain greek yogurt but I wanted to try something new).
